Fruity Macaroni Salad



ACINI DE PEPE FRUIT SALAD
(Fish Eye Salad)
 

Combine:

1 c. sugar
2 tbsp. flour
1/2 tsp. salt

Stir in:

1 3/4 c. pineapple juice
2 eggs, beaten

Cook over medium heat; stir until thick. Add 1 tablespoon lemon juice and cool. Bring about 4 cups water, 1 teaspoon oil and 1 teaspoon salt to a boil. Add 8 ounces (1 cup) acini de pepe (small macaroni for soup). Cook until done. Drain, rinse, cool. Combine custard made above with acini de pepe.

Drain and add:

1 (20 oz.) can chunk pineapple
1 (16 oz.) can mandarin oranges
1 (20 oz.) can crushed pineapple
1 c. miniature marshmallows
1 c. coconut
1 (4 oz.) container Cool Whip

Mix all ingredients together. Refrigerate. Makes 1 large bowl of salad.
